Tasting notes of our locally produced beers and coolers are provided below:

The "River Rocks Lager" is inspired - primarily by the malt-accented lagers typical of Dortmund, Germany. Our aim is to brew a lager that displays defined - though delicate - sweet and clean malt character with restrained bitterness, leading into a gentle 'dry' finish. We rely predominantly on quality pilsener malt to provide body and texture, with a small percentage of light munich malt delivering the hint of sweetness. Carefully balanced additions of Tettnanger, Saaz and Hallertau hops give 'the Rocks' a pleasant spicy touch with a 'citrusy' egde. The 'River Rocks' derives its name from a very special inshore shallow water reef system - literally a stones throw from shore - that, at certain times of the year, provides excellent fishing for Pink Snapper, Westralian Dhufish, Harlequin and other Western Australian reef fish! Where is it I hear you ask?

The "Pride" is based upon the English 'Extra Special Bitter' sub-category of ales. These are big, robust, flavoursome and extraodinarily complex ales, with big malty palates and distinctive hop character. Our version carries obvious caramel/toffee/marmalade notes courtesy of the judisous blend of pale, crystal and choclate malts, pronounced bitterness, and a distinctive herbal/'orange blossom' nose from liberal additions of Goldings and Fuggles hops. An extroverted beer with a lot of personality, the "Pride" takes its name from the Blackwood River, arguably Wetern Australia's most majestic south west river, that winds its way through beautiful jarrah forest and farmland to empty into the sea near Cape Leeuwin (perhaps not too far away from River Rocks!!!???).

The "Smokey Bishop" is a regular beer intended to pay homage to the dark lagers/bocks of Bavaria. The immediate, lush and enticing aromas of dark chocolate and coffee reveal an inviting 'fruit cake' like palate that carries depth of flavour with finesse. The beer derives its character from the special blend of light and dark Munich malts that provide the distinctive chocolate flavours and is only mildly hopped with Hallertau and Spalt to sublty balance the enticing maltiness unique to the style. The name 'Smokey Bishop' reflects our perception of its heavenly nature and an extended hedonistic evening at a local restuarant??? Buy the brewers a beer and they'll tell you the story!!!

In its current guise the Pearl Dust is an easy drinking uncomplicated lager pitched directly at the 'mid-strength' category, and brewed largely to placate the pathological obsession of our accountant (just kidding Harry!!) for such a style to be brewed. While wanting to stay on the good side of 'Uncle Harry' and his figures, we will be continuing to develop the structure and body of this particular beer to carry an identity and character of its own so that, while it will remain a lower strength beer, it will have a distinctive flavour profile. The name of this product is derived from a small infusion of pearl dust added during the boil that, while not contributing any flavour, is reputedly an aphrodisiac. We hope this will counteract 'brewers droop'!

This brew has now become synonymous with Broome Brewery. We use a pre-prepared Ginger essence as the base for this product and then add our own secret formula. This is a lovely thirst quenching 3.5% drink, ideally suited to Broome’s warm climate. Just add ice!
